The New Vintage
It remains to be seen if it will live up to its promise.
In the year 2012 the grapes ripened earlier than I had ever experienced. The heavenly Sauvignon aroma was already fully developed on August 25th.
Even though a few rainy days in the autumn created a bit of hectic, we were able to bring the Sauvignon to the cellar at an optimal time between September 20th-23rd. It promises to be a great vintage.
We harvested the Cabernet between October 10th-12th.
Even though that was not particularly late, our grapes had achieved a harmonious ripeness by then.
Thanks to our bio-dynamic/organic growing methods that balance the soil as well as creating harmony between the sugar and phenolic ripeness, a wonderful Cabernet is now developing in our cellar.
